Sprouts and Microgreens are packed with essential vitamins, minerals, fiber, enzymes, and antioxidants. Pound for pound, sprouts and microgreens are some of the most nutritious foods on earth. According to studies done by Idaho State University, microgreens are 2–3.5 times more nutrient dense than mature leaves cultivated under similar conditions. Furthermore, research done by [so and so] on broccoli found that broccoli microgreens contained 1.15 to 2.32 times more minerals (P, K, Mg, Mn, Zn, Fe, Ca, and Cu) than mature broccoli. In addition to having a greater mineral content than their mature counterparts, sprouts and microgreens contain components that are crucial for our health but are often overlooked or ignored by mainstream health enthusiasts.
